I've seen many Flash sites with sophisticated motion blur effects fro text and JPEGS - it looks as if they've blurred the text in Photoshop and then IMPORTED that back into Flash to use with unblurred text in a motion tween...Is that how it's done? Or is there another way to achieve a zoom/motion blur effect - that makes text look like it's being quickly yanked off the screen?

Such effects (especially with text) are generally made with actionscript and motion tweens. I personally can recommend SWFx by Wildform (http://www.wildform.com/). It took me less than a minute to make this effect:
src="http://www.actionscripts.org/help/kobran/kobran.swf" width="250" height="50" loop=false menu=false quality=high bgcolor="black"
Best of all this program is only $19.99US. Great value.
Alternatively, if you want to try it manually, there are some tutorials at http://www.flashkit.com .

SWFx is waht you want. Wildform are the creators of both Flix and SWFx. They're both great products but only one does what you want.
