Just installed FF2 and I love it, except that now when I try to use Alt-S to post my quick-reply, the History menu drops down :(

Yuo can't remap just one short-cut I don't think. But there are two apparent solutions:

use Alt-Shift-S. Fire Fox 2 allows you to use access keys when pressing Shift

while this isn't exactly related, but does FF 2.0 have a built in spell check? I get red lines under words that I spell wrong in just about every forum I post at now.

Yeah it does. I was sitting around yesterday thinking about how on earth it took so long to get a built in spell checker.
Not to knock MS too much, but it's amazing what you get when other people start taking control of a market. MS have had IE for how long now? And no spell checker... Then I was at this Concert / Event site and they have a button to add (with one click) an event to your Google Calendar. Another classic example; IE + Outlook = ... um... manually enter all the event details!

To be fair, outlook is a desktop calendaring client and google calendar isn't, so if you compare apples to apples, you'd have to look at firefox + thunderbird, which wouldn't be able to integrate like that either.
Having said that, you can most definitely integrate with outlook, but only if you install additional script handlers on every client. I built a proof of concept for work of a visual basic script that was registered as a custom protocol handler in IE and firefox and that could be used to interact with outlook from a web application.
Still, IE is the bane in any web app developer's existance. Debugging in it just sucks compared to firefox + firebug, and it needs a lot of debugging.

Absolutely, that is one of the main premises of capitalism or free-market trading: competition produces better products for the consumer. Now that M$ doesn't have complete control over browser, there is bound to be great innovations coming our way. Can't wait for FF3 next year.
