I am going to start learning MXML soon and after reading various articles about MXML & ActionScript I would like to know if it is best practice to keep MXML code separate from ActionScript code. Currently I keep all of my logic separate from my assets/layout so, when I start implementing MXML into my development process I plan to use MXML for layout/assets and ActionScript for the logic code. Is this a good approach for keeping my development process modular?

I would get stuck in on that basis, and expect to refine things as you fo along. Check out Axiis for a flex 3 oriented project that makes good use of mxml.

If you are learning the flex framework, it is good to start out with Gumbo/v4; it is pretty different, and much better than v3.

You will pick it all up quickly, that's for sure.
