What do you suggest I start building my movie in for Youtube ... optimal width and height?

YouTube recommends a resolution of 320x240.

If you are deadset on having it perfect for youtube you'll want to work with those dimensions exactly -- don't go with 640x480 just because it's easier to see or whatever and then just divide it in half.
