I am trying to find out the best way to have a link pointing to my site from another site. Here are some possibilities and I would like to know the best option of them from an SEO perspective.

The website is promoting adventure activities in and around the Victoria Falls area within Zambia, and on the Zambezi River, this particular company offers everything from horse riding to helicopter flights over the falls.

When I was trying to research the SEO, I found that the most targeted keyword phrase that also had 49500 searches per month globally on an exact match through Google Adwords was "victoria Falls".

The problem is that my site is only on page 3 of Google.com for this keyword phrase and I am only getting about 25 visits a month from it, so I am questioning my backlinks I have built incase I have done it incorrect.

1: This is the way I have been doing it.
For adventure holidays on the Zambezi, check out The <a href="http://www.livingstonesadventure.com" title="Victoria Falls tour operator Livingstone's Adventure" target="_self" rel="follow">Victoria Falls</a>.
And this is what that produces.
For adventure holidays on the Zambezi, check out The Victoria Falls (http://www.livingstonesadventure.com).

2: The second way I have done this is similar but does not target the anchor text as Victoria Falls, so I am unsure if it helps me at all for that keyword, I mean I am already number 1 in the search engines for Livingstones Adventure as a keyword phrase, but if someone typed that in to google then I assume they already know of the company and do not really need Google to find it, also it only has say 80 searches a month globally so what would the point be, I would rather catch the market on Victoria Falls. So this is what I have done.
Visit our website <a href="http://www.livingstonesadventure.com" title="Victoria Falls tour operator Livingstone's Adventure" target="_self" rel="follow">Livingstone's Adventure</a> Victoria Falls.
And this is what that produces.
Visit our website Livingstone's Adventure (http://www.livingstonesadventure.com) Victoria Falls.

From the above would they both produce similar results, or would one be better than the other, also do I need to add the rel tag.

Also it is difficult to get one way links, but does it really matter if a link points to me and I point back to them.

yo, I am the first man to get here.

Oh of course Andrew thanks for that detailed reply, why did I not think of that how silly of me, thanks, now I understand exactly what to do with my entire linking strategy.

Well... just because you get on page 1, #1 - 5 does not mean you will get quality traffic.
It also depends on other things, such as your target audience, their geographic location, the economy, and other sites with those keywords and how well they are doing.

What you want to do is find where your audience is and advertise directly there.

I saw this done few times, but I fail to find the reason why would anyone do it:
target="_self"
obviously, this is the default value, why do you need to state the obvious? (I'm not sure, are there any browsers that behave differently / common frameworks that alter the default behavior by default?).

haha, never really thought about it, but I suppose you are correct, hmm, might as well save my fingers some work next time then. Thanks
