I can't test this myself, so I am asking someone to publish a flash movie with an obscure font so I can see what happens when a user doesn't have the font published in the movie. Will the text fields simply be blank, or will a substitute try to force its way in? Thanks

If you embed the fonts you will not need to worry - and if the font doesn't exist it should default.
You can test for yourself - just open your font folder (settings->fonts, or control panel->fonts), find a font, drag it out to your desktop (so its not in the folder anymore but not deleted), and then open a flash swf you have that uses that font.
It should default - if you open the fla it will give you a choice.
But, if you embed your font, it weon't make any difference. If you worry about size, then embed only font elements you need (for example, only numbers, or only characters, etc.
And if your text is all static (rather than dynamic/input) you won't need to worry - it is automatically embedded.
