I have read in the general requirements that FlashCom only runs on · Windows Server 2003*, Windows 2000 Server, Windows NT 4.0 Server (SP6 or later), Red Hat Linux 7.3, 8.0 or Red Hat Enterprise Linux 3.0* but when I installed the Developer edition it gave Apache as an option for the type of server I was using (at least I think it was for the type of server). Am I remembering incorrectly or will FlashCom work on Apache?

I would think that the web server would be irrelavant. except for the admin pages. If FCS is being installed on a supported OS, I think you'll be fine. If Apache is running on a supported version of Linux, Or some other "-IX" Operating System (Unix, BSD, etc) you should be ok... I believe during istallation it will ask you which Web Server you have to install the Administration web pages.
