Flex builder opens .mxml and .as files, as well as .xml and other text files like .html files, I think.

*.mxml and *.as can both be open in flex builder.

If you are asking about how to open an actual project that contains a lot of mxml and as linked together, you will need to either, open the whole project folder, or zip the folder then have flex open this zip file (archive file)
